Quick & Easy Asparagus Salad

A quick & easy asparagus salad

You will need:

Baby leaf salad
1 ripe avocado
Olive oil
Asparagus
Streaky bacon
Lemon juice and zest

Place the salad leaves in a serving dish and add the cubed avocado.
Drizzle with olive oil and lemon juice.
Get a griddle pan going on the stove – on medium heat.
Wrap bundles of asparagus {3 in a bundle works well} in a piece of streaky bacon.
Cook it on a hot griddle pan, turning it so the bacon gets cooked on all sides.
Once the bacon is cooked, remove from the pan and place onto your salad.
Grate some lemon zest over it and serve.

Because it’s quick, super tasty and oh-so-easy. Totally kid-approved too! 😉

I cannot believe it’s almost November! Holy moly, where has the year gone?!

Christmas decorations and merchandise are popping up everywhere – is it just me, or does Christmas start earlier each year?
Don’t get me wrong – I LOVE Christmas, it’s such a special and magical time of year, but I do feel that the retail side of things creates this urgency and manical feeling in people. It’s like time is running out…

Why can’t we just savour this time and spend quality time with our families, instead of rushing around and then trying to cram it all into one week?

I’m just as guilty though… Hence, I try and come up with delicious time-saving recipes!
