Immune Boosting Chicken in a Coconut & Pumpkin Broth

Move over chicken soup, there’s a spicier, more exotic, immune boosting cousin in town…

I have boys – 2 of them! And when they get sick, I tell them stories of how the food / medicine / ointment will Judo-chop the germs into oblivion…

This immune boosting dish does that – it also cures ‘man-flu’ and is super-tasty! {Those of you not familiar with the dreaded ‘man-flu’, count yourselves lucky!}
However, if you have a husband / boyfriend / brother / male friend, you should know what I’m referring to…
It is similar to normal flu-like symptoms, except that it is apparently 10000000x worse. Men literally cannot function while they have the ‘man-flu’. Generally, hospitalization is required. {Not really…}

Right, so to get back to my recipe – here it is and it will really help with ‘man-flu’ and any other illnesses:

Immune Boosting Chicken in a Coconut & Pumpkin Broth

You will need:

1 whole chicken
1 tbs curry powder
1 onion, chopped
1 large knob of fresh ginger {about the size of a date, finely chopped}
1 tbs coconut oil
1 tbs olive oil
Salt
3 cloves of garlic, peeled
3 red bird’s eye chilies {or any hot chili, slit open length-ways}
2 sachets of concentrated chicken stock + 2 cups of water OR 2 cups of strong chicken stock}
1 tin coconut cream {it’s slightly thicker than regular coconut milk}
1/4 pumpkin {probably around 500g, peeled and cut into large chunks}

Start off by heating the coconut oil in a large pot {the pot should have a lid and be able to go into the oven} and sauteing the onion.

Add the curry powder & ginger and fry until the onion is soft.

Tie the legs of the chicken and rub with fine salt.
Add the olive oil and brown the chicken on all sides.

Next, add the stock, coconut cream, garlic and chilies.

Cover the pot and let this just start to simmer on a medium heat while getting your oven to 180C.

Add the pumpkin to the pot and place in the oven for 90 minutes.

The chicken will be tender and juicy, falling off the bones quite easily.
The pumpkin will infuse with the broth to create a rich and creamy broth with bits of pumpkin.
This is all married together with ginger, coconut and chilli flavours – all working together to Judo-chop all your woes away! 🙂

Some interesting info on pumpkins:

  • It is a very low-calorie vegetable, despite it’s ‘fleshy’ flesh
  • It is extremely rich in anti-oxidants and vitamins A, C & E
  • It has one of the highest percentages of Vit A – do you SEE what I mean?
  • It is rich in minerals and also B-vitamins
