Eggnog Ice Cream {Low Carb & Luscious}

Well hello there,

isn’t it a great day for ice cream? Yes, I thought so too!

This will take you back to Christmas – creamy eggnog, spiced with nutmeg and cinnamon. You can give it some kick too by adding a dash of rum or brandy. 😉

Eggnog Ice Cream

You will need:

500 ml thick cream {or you could use half pouring, half thick – or even just use whipping cream, but the thicker, the better}
2 eggs {separated}
1/4 cup xylitol
1 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla extract

Whisk the egg yolks until pale.
Add the cream, xylitol, vanilla, nutmeg & cinnamon and mix well.

Whisk the egg whites until stiff peaks and fold into the yolk mixture.

Place in a metal bowl and freeze.
Whisk it every half hour with a fork until it’s creamy and set.

Yummy – enjoy! X

{Just do take care when using xylitol, as it is poisonous to animals.}
