Steak ‘n Egg Breakfast Pizza

Let me just start off by confessing something: I LOVE steak.
Sometimes I feel like I could eat an entire cow.
{If I’m offending anyone by my statement – well, sorry…
And Happy Monday! 🙂 }

This weekend was really one of those lazy ones where you spend most of it on the couch, watching TV or reading a book…

Everyone needs a weekend like that every once in a while – in fact, at least one day a week should be spent like that!

I think you just get to a point during the week where you have to press the ‘reset’ button…
Whether you work somewhere or stay at home, everyone needs a chill day.

I wasn’t entirely useless this weekend though, hubby and I went for a long run on Sunday with our running club – and let me tell you, it was a scorcher!

I’ve realised 2 things {fine, I actually KNEW this already}:

  1. Get up early and go for an early run – it just gets hotter and more difficult the later you go…
  2. Don’t run when you’re in a mood!
    Yes, for some people running helps them to blow off steam, and it does, but if you’re feeling resentful or ticked-off at someone related to your running, well then that feeling of ‘stuff-it’ is more likely to creep in…

Let’s get to the recipe, shall we?

Kind of a pizza,
kind of an open omelette…

{Let’s call it a pizza – I like the sound of that much better!}

Steak 'n Egg Breakfast Pizza

  • Servings: 2 extremely hungry people, or 4 semi-hungry people
  • Difficulty: easy
  • Print

{You’re going to need some leftover steak, so this is perfect the morning after a braai.}

You will need:
1 onion, thinly sliced
1 tbs butter
2 cups cherry tomatoes, whole
1 tbs coconut oil
6 eggs
2 tbs cream
Mozzarella cheese, grated
Avocado, sliced
Wild rocket
Leftover steak, cut into strips

{The best steak to use, is a nice piece of rump or rib-eye {super tasty and just the right amount of fat} that you’ve cooked on the braai / grill / barbecue.
It should have that charred taste.
It should also be medium-rare or even rare and topped with ‘your-best-friend-butter’…}

Start by sauteing the onion over a medium heat in butter.
Once they are soft and starting to caramelise, add the tomatoes.
Let it cook until the tomatoes are soft – then squish them just a tiny bit and set aside.

Warm the steak and cut into strips – set aside.

Whisk the eggs and cream.
Heat the coconut oil in the same pan that you’ve just used for the onions & tomatoes – the beautiful flavours go into the eggs and it saves you some washing up later…
You want the pan and oil to be really hot.
Pour half the egg mixture into the pan and let it cover the bottom – like a pancake.
{If you’re making 4 smaller pizzas, just use a quarter of the mixture then and make the base slightly smaller.}
Place the lid on and let it cook – this doesn’t take long.
Once the egg is completely cooked, just wiggle the pan to loosen it and slide onto a plate.
{Repeat for however many you’re making.}

Top the pizza bases with grated cheese, tomato mix, steak strips, avo and rocket.
Drizzle with leftover steak juices and season with salt & pepper {although I didn’t find it necessary…}.

And who ever said that Low Carb is boring?!

Super tasty, extremely filling and just the treat for any day really…
Also great for brunch on a weekend – you could even make it fun and interactive and let each person build their own breakfast pizza!
