Quick & Easy Low Carb Breakfast Bowls

 

Seeing as breakfast is the most important meal of the day – let’s make it a good one, shall we?

This one is quick, it’s easy and it’s really good!
Once again, using a few key, classic ingredients to create a really yummy meal.

Quick & Easy Low Carb Breakfast Bowls

I have 2 {make that 3 – hubby included} really demanding early birds at home – they need food as their eyes open in the morning…

I don’t always have nut granola on hand – besides, they really love their eggs – so I often have to quickly whip up some eggs.

Scrambled eggs can get a bit boring and it’s always nice to mix things up a bit, plus I’m always in favour of sneaking in some extra greens.

Quick & Easy Low Carb Breakfast Bowls

You will need:

1 packet of bacon {250 g}, cut into pieces
2 cups baby spinach
Butter
3 eggs, soft boiled
Chili, garlic & coriander butter {secret ingredient} 😉

Heat the butter and fry the bacon.
Add the spinach and just let it wilt down.
Add the garlic butter and let it melt into the spinach and bacon.

In a separate pot, boil the eggs for 5 minutes:
Place the eggs in a medium pot and cover with cold water.
Bring it to the boil and only start timing it once it’s started to boil.

Once the timer for the eggs go off, empty out the hot water and cover the eggs with cold water.
Prick a small hole in the fat bottom of the egg – this makes it peel easier.

Peel the eggs, cut in half and serve it with the bacon & spinach.
Season with salt.
