Funky Little Chili Squash Bowls

I just love clever, fun ways of dishing up food – and if it encourages the kids to eat, well then great!

These funky little chili squash bowls are fun and it does just that – you can file¬†it up there with ‘superhero food’…

My kids have no problem with gem squash, but the oldest one often doesn’t like meaty, stew-like dishes…

This way they have fun eating it from the gem squash bowl ūüėČ

Chili Squash Bowls

You will need:

4 medium-sized zucchini, sliced
1 red pepper,diced
1 leek, sliced
10 baby aubergines/ 2 large aubergines, halved / chopped
250 g rosa tomatoes, whole
2 tbs coconut oil
250 g minced venison or beef
salt & oregano to season
2 tbs tomato paste
150 ml water
1 red bird’s eye chili
4-6 gem squash {boiled & halved}

Start by placing all the veggies {not the chili} in a large roasting dish, dot 1 tbs of coconut oil into the veggies {it melt as it roasts} and season with salt.

Roast in the oven on ‘grill’ for 1 hour, making sure you stir it every now and then.

As soon as the veggies are roasted and sightly charred, blitz it into a puree with a stick blender.

Heat another tbs of coconut oil in a large pot, add the tomato paste and fry for a minute or 2.

Add the minced meat, season with salt & oregano and let it brown.

Add the vegetable puree, chili and water and let it simmer for 10-15 minutes.

Serve inside gem squash halves and top with a dollop of sour cream or cream cheese {I used the most divine Jalapeno cream cheese from Swissland Cheese} and some spring onions.

You can also enjoy the basic chili over cauli mash or some zucchini noodles!

To be honest, it’s so yummy and packed with veggies, you can enjoy these chili squash bowls just as is!
