LCHF Skinny Burgers

Skinny burgers as in, light, refreshing and not too heavy on the toppings.
They’re juicy and packed with flavour; smoky, charred, with a hint of chipotle and served with a refreshing cucumber salad.

'Skinny' Burgers {LCHF, Banting, Bun-less}

Burgers with Cucumber Salad

  • Servings: 8
  • Time: 1hr

You will need:

1 batch of burger mix, with an added tbsp. of chipotle seasoning and psyllium husk {for added firmness}
1/2 a large cucumber, thinly ribboned with veggie peeler
1/2 red onion, thinly sliced
small bunch of dill, finely chopped
small bunch of mint, finely chopped
1 cup double cream plain yoghurt
1 tbsp. mayo
2 tbsp. salmuera dressing

Prepare the burger mix and shape into patties.
Flame-grill to perfection.

Mix all the salad ingredients together and serve with the burgers.

A lighter take on hamburgers, I love my skinny burgers! Add some champagne and you’ve got the perfect meal!

{True story: I’ve decided to drink more champagne this year, it’s kind a new year’s resolution for me… 😉 }

With the shops stocked to the brim with winter clothes already, I am reminded that we should be making the most of these remaining few weeks / months of summer.

Living in sunny South Africa, that means lots of braais, meals outside on the patio while the kids are running around in the yard; easy, fuss-free cooking that includes heaps of salads and flame-grilled meat…
I can go on forever describing a perfect scene, but I’m sure you get the picture. There’s just something magical about our summers!
And the sunsets – man-oh-man, like I said, you need champagne for that…
