Smashing Pumpkin Salad

Smashing Pumpkin Salad {LCHF, Banting, Paleo Side}

Herby Smashed Pumpkin

  • Servings: 4-6
  • Difficulty: easy

You will need:

500 g diced pumpkin
fresh coriander – about a large handful
olive oil
salt
1/2 tsp chili relish {use any chili ‘pickle’ or relish – without any nasty ingredients}
1 tbsp. salmuera dressing

Cook the pumpkin, drain and mash roughly with a fork.

Season with salt and drizzle generously with olive oil.

In a small jar, mix the chili and salmuera plus another tsp of olive oil.
Add chopped coriander and shake well to mix.

Pour the dressing over the pumpkin and garnish with more coriander.

See – easy, peasy!

This pumpkin salad is perfect as a quick side dish to just about any main, but it goes especially well with flame-grilled steaks or chicken.
