Fishcakes with Bacon & Chilli Guacamole

Because, you know, you need bacon with everything – even fishcakes!
And, I promise, it’s really good!

I’ve been back into training this week, running and going to the gym, and just craving a bit more carbs… {Maybe I need it?!}

I’ve been eating more healthy carbs like sweet potato and also trying to get in a bit more protein.
{Oh my gosh, I sound like one of those stereotypical cross-fit memes, like: hey bra, have you had your protein shake today? LOL}

These fishcake stacks are packed with protein and good fats from the bacon, avocado, fish and eggs and also satisfies that carb-craving…
It’s also one of those dishes that you can pretty much have for breakfast, lunch or dinner.
{Ours was dinner.}

Fishcake Stacks with Bacon & Chilli Guacamole

You will need: 

1 cup leftover cooked fish {finely flaked}
2 cups leftover roasted sweet potato {skin on}
1 egg {to go into the fishcake mix}
1 tbsp. psyllium husk
a handful chopped fresh coriander
butter

To serve:
12 rashers of streaky bacon, cooked
4-6 medium-boiled eggs
2 ripe avocados
lemon juice
a handful chopped fresh coriander
salt & pepper
chilli relish or fresh chopped chilli {I love this banting chilli from Corrado’s – click here}

The fish and sweet potatoes that I used were leftover from a braai and were cooked on open coals, so they have a nice smoky flavour…

Just mix all the ingredients {except for the butter} together for the fishcakes and please make sure you’ve removed all the fishbones…!
Let it stand for a few minutes and then shape into fishcakes.
{I got out 5 fairly big fishcakes, but you can make them any size you want.}

Now, prepare a baking sheet with baking paper.
You will need a ring mould or a ramekin to shape your fishcakes – or, just use your hands for a more rustic appearance.

Shape the fishcakes, add a teaspoon of butter on top of each and bake at 180C for 25 minutes.

Serve with bacon rashers, guacamole {mash the avocados and add chilli to taste, along with a squeeze of lemon juice and season with salt & pepper} and egg.
Garnish with fresh herbs, micro greens or pea shoots.

*NOTE: I didn’t add any spices or salt to the fishcake mix, because you’re already using cooked {and hopefully seasoned} fish and sweet potato.

Something a bit random, but I feel it’s relevant: the word CHILLI – I’ve always spelt it chilli with 2 ‘L’s’ and then quite some time ago, I saw it spelt ‘correctly’ as chili with 1 ‘L’ and I’ve been spelling it that way ever since…
But every time I write anything electronically, spellcheck points out that it should be spelled with 2 ‘L’s’…. So I decided to spell it with 2 ‘L’s’ today – I hate those red spellcheck errors…
So – which one is correct? Any grammar-police out there who can help? 
{We use English-spelling, as in UK English, here in South Africa…}

These are really quick and easy to make, they’re packed with flavour and filled with good, fresh, real ingredients.

Great for using up fish-braai-leftovers and to be honest, I’ll have a fish braai just to make these the next day!
