Pecan & Chocolate LCHF Fudge

What’s not to love about a LCHF fudge treat that has very little carbs?

How about the fact that it only uses 5 ingredients?
Or that you can whip it up while the bath water is running and enjoy it as soon as the kids have gone off to bed..?
You could even make enough for them too – a yummy afternoon treat. {Or just keep it all to yourself :0 }

Pecan & Chocolate LCHF Fudge {Sugar-Free, Banting}

As much as I love a sweet treat every now and then – LCHF of course – a long list of ingredients and complicated method can put me off.

Sure, if I’m planning ahead, it’s fine, but let’s be honest, when a craving hits you’re usually out of ingredients.

This LCHF fudge is made from ingredients that I’m sure are in everyone’s fridge and pantry.

Pecan & Chocolate LCHF Fudge

You will need:

2 heaped tbsp. butter at room temp
2 heaped tbsp. softened cream cheese
1/4 cup dark chocolate {70%}, broken into chips & melted in the microwave
1/4 cup pecan nuts
1 tsp xylitol

This recipe will yield about 6 single-piece servings, but I will give the ratios too so that it is so easy to increase the quantities.

Basically, it’s equal parts butter, cream cheese, melted chocolate and chopped pecans; and for every 1 cup {volume} of mixture, add 1 tsp xylitol.

Simply mix everything together and spread it onto wax paper {in a small container} to set in the fridge.

You could substitute the melted chocolate for cocoa powder, mixed with a few drops of hot water to make a paste…

You could also shape these into truffles to be a bit more elegant…

Not only do these make a fab little treat, you could also grab one as an energy bar an hour or so before your workout or as a post-workout snack.

And like I said – a perfect sweet treat for the kids instead of regular sugar-laden chocolates or sweets.

Just remember to keep these in the fridge, else they’ll melt! x
