Roast beef is one of those classics that can seem quite daunting to make, but is actually really easy.
All you need is a good piece of meat and a few simple ingredients.
Less is more – you want to bring out the best in your roast, not smother it with all sorts of flavours and sauces.
Classic roast beef, naturally low carb, in 3 easy steps:
You will need:
1.5 kg beef roast
4 cloves of garlic
1 bay leaf
1 tsp coarse salt
1 tbsp. coarse mustard
2 tbsp. olive oil
small handful fresh parsley
1 green chilli
4 sweet potatoes, cut into chunks
Step 1 – Marinate:
Place the garlic, bay leaf, salt and parsley in a mortar & pestle and smash / grind it making sure everything is crushed to release their flavour.
Add olive oil and mustard, mix well and rub it all over the beef.
Cling wrap tightly and let it marinade overnight in the fridge.
Remove from the fridge an hour or so before cooking, to allow the meat to reach room temp and cook more evenly.
Step 2 – Cook:
Preheat the oven to 200C.
Place the beef in a large roasting dish, along with the sweet potatoes.
Cook, uncovered for 15 minutes at 200C to allow create a roasted ‘crust’ on the meat.
Set the oven to 180C, drizzle the sweet potatoes with olive oil and sprinkle with salt.
Place the lid on and cook for 1 hour at 180C.
Step 3 – Rest:
After an hour, remove the roast from the oven and let it rest for at least an hour.
The roast will be juicy and ever-so-slightly pink inside, but not undercooked.
If you prefer a more well-done roast, don’t cook for longer, rather slice and pan-fry individual pieces, so as not to dry out the entire roast.
Serve with sweet potato wedges.
Just add a salad or fresh greens and you’re good to go!
