Energy Balls for Healthy Kids

My goodness, I need to make a huge stash of these energy balls!

They make an excellent lunch box treat and is packed with good stuff. These little energy balls will fill a tummy hole and keep little ones going without giving them a sugar-spike!

I must confess, I also love these Energy Balls as a pre-run or pre-workout snack…

They’re just big enough to fill that little gap without weighing you down.

And did I mention lunch boxes?! My kids absolutely LOVE these, they actually call them chocolates..! Haha!

Fine with me… I’ll pack them these ‘chocolates’ everyday.

Makes: 15 balls
Time: 15 minutes
Difficulty: Easy

You will need:

1 cup oats
1 cup desiccated coconut, unsweetened
1/2 cup dried cranberries, unsweetened
1 small banana
2 tbsp. nut butter or peanut butter without any additives or sugar

Toast the oats and coconut in a pan until golden and toasty.

Place the oats, coconut and cranberries in a blender and blitz until well-mixed and the cranberries are little nibs.

Mash the banana with a fork and mix in the oats blend and nut butter.

Shape into small bite-sized balls and keep in the fridge.

If you’re on a strict LCHF journey, or just starting out, rather give these a miss, as oats are not part of a low carb lifestyle.

For growing kids, oats is perfect.
If you’re not ‘sick’ and lead quite an active lifestyle, a cup split over 15 balls are perfectly fine too.

You could play around with different flavours too; try adding some cocoa powder!
