LCHF Curried Green Soup – AKA Swamp Soup

When you think of comfort foods; curries, hearty soups and the like comes to mind… So I’ve combined those into a delicious, ‘swampy’Β LCHF Curried Green Soup πŸ™‚

Curry spices like cinnamon, cumin & chillies are powerful antioxidants, keeping those Winter sniffles at bay.

I’ve combined a yummy green veg soup with a Massaman curry mix for a warming, comforting LCHF Curried Green Soup – or ‘Swamp Soup’ as I told the boys…

You know, for me soups have always been a bit of a hit or miss situation… It’s either seriously good or a complete failure!

I’ll never forget the first time I made soup… I mean, it’s just veggies and water, right?!

Er, no…

Anyways, it’s really, really important to get your seasoning and flavour spot-on.

You will need:

1 red onion, diced
80 g packet of Woolworths Massaman Curry PasteΒ {Onions, Salt, Galangal, Red chilli, Lemon grass, Fresh coriander, Cumin, Garlic, Coriander seeds, Thai lime peel, Tamarind, Nutmeg, Cardamon, Pepper, Cinnamon, Star anise}
6 medium zucchini, sliced
200 g / small head of broccoli, roughly chopped
500 ml chicken stock {homemade is ideal, or otherwise bought fresh}
1 tin of coconut cream {400 ml}
fresh basil & Italian parsley to serve
spring onion to serve
fresh red chillies to serve

Fry the onion in a tbsp. of coconut oil, until soft.
Add the curry paste and fry for a minute or 2.
Next, add the broccoli & zucchini.
Add the chicken stock and cook until soft.
Finally, add the coconut cream and blitz with a stick blender until smooth.

Serve with finely chopped basil, parsley, spring onions and red chillies. You could also add some sprouts for a bit of crunch.

The curry paste that I used has no sugar or other preservatives, making it a very handy and quick flavour solution. It’s not very spicy either, so it really is perfect for the whole family.

It can be tough to stay on a clean-eating track when your spirits drop or the Winter-blues set in…

You might tend to reach for sugary treats or processed junk food or even ‘legit’ junk food to pull you out of the blues. The inevitable upshot of your moment of weakness will be a blood sugar spike, then a mood crash and brain fog that sticks around for much longer.

The smarter solution to the occasional bout of the moody blues is a more measured approach. When you eat nutrient-dense combinations, you’re getting what your body needs to build, protect and mend your brain.

Feed your brain properly and it will reward you with sustained laser-focus, a more cheerful disposition {like Mary Poppins πŸ˜‰ } and an improved ability to deal with stress.

I can eat this LCHF curried green soup for days and when it helps my mood, even better!
