This LCHF Mixed Berry & Elderflower Sorbet is super easy to make! It’s also sugar-free and really refreshing.

So, you only need like 2 ingredients…

Yep – just 2, if you count water, then 3.

LCHF Mixed Berry & Elderflower Sorbet

A super smooth sugar-free sorbet with a sweet berry kick! No churning necessary. Makes about 1 litre.

Ingredients

  • 310 ml sugar-free elderflower cordial
  • 500 g frozen mixed berries
  • 125 ml boiling water

Instructions

  1. Chuck everything into a blender and whizz until smooth.

  2. Pour into a large metal container, cover and freeze.

  3. Cut it up into chunks and blitz again in your blender until smooth.

  4. You can serve it immediately or freeze again until you need it.

I used Gudgu’s sugar-free elderflower cordial – it’s made from xylitol, steviol extract and elderflower.
They also do other flavours, so experiment a bit!

This makes a delicious cool treat on a hot Summer’s day! You know, like a South African Christmas or warm New Year’s day…

I’ve never made sorbet before, only ice cream and even so, the thought used to stress me out a little bit… It just seemed like quite a complicated process, but then I realised that making ice cream is actually quite easy and straight-forward.

Same story with the sorbet, in fact, it might be even easier than making ice cream! Hooray!
