There’s nothing like a great salad – a salad with a bit of a wow-factor!
I don’t like boring salads, but I also don’t like salads so crammed that you don’t really taste anything.
There has to be a good balance.
I love this festive ham salad with just the right amount of crunchy green veggies, fatty ham {pork rashers}, Parmesan and dried cranberries.
I love the way the mustard vinaigrette brings everything together and adds a bit of a tang, without overpowering the ingredients.
It can easily be a meal on its own!

You will need:
+- 200 g green beans
1 small head of broccoli
1 tbs dried cranberries
+- 400 g smoked pork rashers
1 tbs butter for frying
2 tbs toasted pistachio nuts
2 tbs Parmesan shavings
2 tbs olive oil
1 tbs coarse mustard
1 tbs red wine vinegar
1/2 tsp xylitol
Steam the beans and broccoli for 5 minutes, then immediately rinse them under ice cold water to retain their crunch.
Cut the pork rashers into bite-sized pieces and fry in butter until just golden.
Next, make the vinaigrette by mixing the olive oil, mustard, vinegar and xylitol together.
Assemble the veggies onto a serving dish, top with the pork rashers and sprinkle with cranberries, Parmesan and pistachios.
Dress generously with the vinaigrette.
This salad should be enjoyed at room temperature or slightly warm, not cold.

I call it a festive ham salad, because, well, it IS just that – so festive!
With jewel-like cranberries and luxury pistachios adorning the yummiest pork rashers, it’s totally fitting for Christmas, Thanksgiving or any gathering really..
Go on – try it! It’s quite quick to make and won’t have you spending hours in the kitchen.
