LCHF Chocolate Ice Cream Bars

Rich and decadent, ultra-creamy LCHF Chocolate Ice Cream Bars… These bars are more like ice cream cookie sandwiches, with a cookie base and a velvety chocolate ice cream layer.

Take it to the next level with a scoop of toasted coconut ice cream sandwiched in-between two bars!

I’ve always thought that winter is the best time for ice cream – I know, I’m a bit weird like that…
You see, obviously I’ve always liked ice cream, I mean, who doesn’t?!  But during my pregnancies {both during winter} I really, really craved ice cream, and my love for the stuff has stayed with me ever since…

These bars are really easy to make, but it does require a bit of effort, especially if you’re taking it to the max with the toasted coconut ice cream.

You will need:

For the cookie base:
1 3/4 cups almond flour
1/2 cup melted salted butter
1 tbsp. coconut flour
1/4 cup xylitol

For the chocolate ice cream:
2 whole eggs
2 egg yolks
1/2 cup xylitol
1 cup cream
1 cup coconut cream
3 tbsp. cocoa powder

For the coconut ice cream:
2 whole eggs
2 egg yolks
1/2 cup xylitol
1 cup cream
1 cup coconut cream
1/2 cup toasted desiccated coconut

Start with the base:
Mix all the ingredients together and press into a 9×13 INCH baking dish. Bake at 160C for 15 minutes.
Remove from the oven and let it cool.

Next, the chocolate ice cream:
Over a double-boiler, mix the eggs, yolks and xylitol with an electric mixer, for 5 minutes.
The mixture will become pale, fluffy and velvety and almost double in size.
After 5 minutes, remove from the boiler and continue to mix for another 5 minutes, until it has returned to room temp.

In another bowl, whip the cream and cocoa powder until soft peaks form.

Fold the cream and the coconut cream into the egg mixture.

Pour the chocolate ice cream mix onto the cookie base and cover it with cling wrap right onto the ice cream – flush – so that it doesn’t crystallise in the freezer.
Freeze overnight.

Once the bars are set and frozen, cut into 24 squares.

You can now sandwich a scoop of coconut ice cream in-between 2 bars and enjoy!

This is one of those treats that I hide from the kids, I just want it all to myself!!
Hubby and I wait until we know for sure the kids are asleep and then we enjoy these…

For a dinner party you can glam these up with toasted coconut flakes and dark chocolate shavings.
