One Pot Chicken and Mushroom Dish

Ok, so it’s not the most creative name for this recipe, but it is what it is…
It is a one pot chicken and mushroom dish that is so quick and easy to throw together, making it perfect for a weeknight dinner, especially if you’re pressed for time or just feeling lazy.

It has only 5 ingredients, which you probably have in the fridge already…

Simple, real ingredients with huge flavour – yes, yes and yes!

You will need:

100 g salted butter
3 large chicken breasts, skin on, cut into cubes
250 g sliced button mushrooms
2 cups Swiss chard spinach, chopped
1 onion, thinly sliced

Start by sautéing the onions in the butter.
Once they’re soft, add the chicken cubes, season with salt and let it fry until golden, but not overcooked.

Add the mushrooms and let these also turn a golden brown.
{The key is to use a large enough pot so that everything can fry properly and not start to boil.}

Lastly, add the spinach and just let it wilt down for a few seconds.

Serve in bowls.

Seeing as it’s International Women’s Day today, I really want to say to all the women and especially moms out there, juggling a career, household and kids, well freaking done!!
I take my hat off to you.

I work from home and rarely have to deal with traffic, late office hours and such, and I still feel that I’m not always coping.

So – men, show your ladies you appreciate them, and ladies, feel proud of yourselves!
