A hearty roast veg salad is a great way to get in your greens during Winter. It also provides just enough good carbs to make it as comfort food!
We have such stunning, sunny Winter days here in Joburg and a braai is not a foreign concept.
You know me, I like to keep things simple. I’d rather serve up a decent salad {like this roast veg salad} along with one other side, than present a confusing array of dishes.
You could even serve this roast veg salad as a meal! Maybe for lunch?
Anyways, so here’s the how to:

Time: 45 minutes
Difficulty: easy
You will need:
1 butternut, peeled, seeds removed & diced into small cubes
2 carrot, cut in half and then into thin ‘strips’ {not quite Julienne, but not too thick either}
350 g baby sweet potatoes, cut in half
1 fennel bulb, sliced
1 tbsp. coconut oil {neutral} – liquid {just microwave for a minute}
salt flakes
200 g baby spinach
1 head of Romaine lettuce, cut into strips
feta cheese
fresh coriander
2 avocados {optional extra}
toasted pumpkin seeds {optional extra}
Place the butternut, carrot, sweet potatoes and fennel in a large roasting tray.
Drizzle over the coconut oil and season generously with salt flakes – about a tablespoon.
Cover with foil and bake at 180C for 30 minutes until the veggies are soft.
Remove the foil and roast under the grill for another 10-15 minutes to give the veggies a nice ‘char’ and slight caramelisation.
Allow the veggies to cool to room temp.
Place the spinach and lettuce in a large salad bowl.
Add the roast veggies and drizzle over the pan juices.
Top with fresh coriander sprigs, avocado & toasted seeds.
Crumble the feta cheese on top – and voila!
If you want to save yourself some time later in the week, you could roast some extra veggies and keep them separate.
Simply add greens and a protein {chicken breast / tuna / steak strips / etc.} for a quick and easy lunch – or as a lunch box.
This roast veg salad pairs well with a glass of wine {red or white – you decide ;) }, a grilled steak or some lamb chops. Add friends, a lovely Winters day and you’re all set.
